day for John Brown
A fiery, passionate character, John Brown manages everything front of house.
He works hard, plays hard and commands respect from everyone around him.
Edinburgh born but formally trained in Australia, he has managed some of
Edinburgh’s finest restaurants. Having worked in The Balmoral, The Dome and
Malmaison, he still works at a pace, necessary for the constant buzz and
bustle present in the busy restaurants and bars of Edinburgh.
Heavily inspired by his time spent working under the charismatic Guido Guida
in the famous Tramp private club in London, John guides the service staff in
all restaurants to read the needs of the customer to provide the quality
and consistency of silver service minus the stuffiness.
Some of John’s favourite dishes are Derek’s parfait, pickled shitake mushrooms
and the venison although he is a huge fan of Derek’s cooking in general.
