from the stereotypical image of the temperamental chef. A naturally calm, amicable guy, he
just wants to pass on some of his enthusiasm and passion for cooking and make good, simple
food for everyone to enjoy.
Donegal born and bred, trained in Edinburgh and having worked with some of the finest chefs
in the country (among them Heston Blumenthal) in no fewer than four Michelin starred kitchens,
Derek is undoubtedly one of the best chefs in Ireland and the UK at the moment.
